SNEAK THOSE VEGGIES MAMA - PICKY EATER MEAL IDEAS - HEALTHY TODDLER MEAL IDEAS

Do you have a picky eater on your hands? Are you looking for ways to up your kiddos nutritional value of their food? Well then let’s sneak in some veggies Mama! In today’s video I am sharing with you some awesome recipe ideas to help sneak veggies into your kiddos food. They won’t even notice! They will enjoy their food, while you can feel great about the nutritional benefits they are receiving.

Veggie Loaded Pasta Sauce:

1lb Ground Beef
1 Diced Onion
1 Grated Zucchini
1-2 Grated Carrots
1 Tablespoon Minced Garlic
1 Jar Pasta Sauce
1 8-15 oz can Tomato Sauce
1 Box Chickpea Pasta (or your favorite pasta of choice)

Cook pasta according to package instructions.
Cook ground beef and diced onion till browned. Add in grated zucchini and carrots. Cook down for a few minutes till softened. Add in garlic, and cook for about 30 seconds. Add in pasta sauce and tomato sauce. Simmer till thickened. Add in cooked pasta and stir till combined.

Carrot Cake Breakfast Cookies:

1 Egg
½ Cup Unsweetened Applesauce
2 Grated Carrots
1 Cup Old Fashioned Oats
¾ Cup Oat Flour
¼ Cup Protein Powder (unflavored) - You can omit the protein powder and just replace it with the equivalent of more oat flour
½ Cup Sweetener of Choice
½ Teaspoon Baking Soda
¼ Teaspoon Salt
¾ Teaspoon Cinnamon
¼ Teaspoon Ginger
⅛ Teaspoon Nutmeg
2 Tablespoons Melted Coconut Oil

Preheat oven to 350. Combine all ingredients in a bowl. Scoop on to a parchment lined baking sheet and press into a disk shape. Bake for 10-15 minutes, or until edges are set.
These would be delicious with added in chopped nuts and raisins. I didn’t add these as they can be a choking hazard for little ones, but if your kids are older or you are making them for yourself I would try adding them!

I also like to keep these in the freezer and then just microwave for an easy breakfast or snack.

Broccoli Cheese Bites

2 Cups Cooked Steamed Broccoli
1 Egg
½ Cup Almond Flour
1 Cup Shredded Cheddar Cheese
¼ TeaspoonSalt, Onion Powder, Garlic Powder, and Pepper

Preheat oven to 450. Chop the steamed broccoli into very small pieces. Combine with all other ingredients. Press into greased mini muffin tin. Bake for about 15 minutes, or until golden brown and crispy.

Cauliflower Taco Meat

1 lb Ground Beef
1-2 Cups Fresh Riced Cauliflower
Taco Seasoning (packet or your own)
1 - 8 oz Jar tomato sauce

Brown ground beef in a skillet over medium high heat. Add in riced cauliflower and cook until soft. Add in taco seasoning and cook till fragrant. Add in tomato sauce, cook till thickened.
