Vegan Thai Red Curry | Veggies Loaded Thai Red Curry With Tofu
For Tofu Marination
2 tsp Thai red curry paste
1 tsp Salt
½ tsp ground black pepper
4 tbsp Coconut milk
2 tbsp Corn starch
14 oz / 400 gm Tofu
Directions:
Put all ingredients in a bowl. Mix all ingredients.Now add tofu. Coat tofu with marination.Let it sit aside for 15 mins.
For Curry
2 Tbsp oil (Here I have used Avocado oil . You can use coconut oil too.)
2 Jalapeno, sliced
2 Cups broccoli
1 carrot,sliced
9-10 Lime Bean? Sem phali
1 onion, sliced
7-8 cloves garlic, minced
½ tsp ginger
2 Tbsp red curry paste
1½ Tbsp soy sauce
1½ can full-fat coconut milk (14oz.)
Fresh cilantro, chopped for garnish
1 bowl, cooked jasmine rice
Directions:
1. Chop ginger ,garlic and onion. Chop vegetables into slices. Set aside.
2. In a pan on medium high heat, add avocado oil. Add marinated Tofu. Cook for 3-4 minutes.
3. Add garlic and ginger to the pan and continue to cook. Now add all vegetables. Stir well and cook for 10 mins.
4. Add soy sauce, red curry paste, and coconut milk into the pan. Stir well between each addition.
5. Cook until the curry thickens up a bit.
6. Pour over rice, and enjoy!
