I'm so excited to share my Top 5 easy vegan plant-based meals that require little time and energy and only one pot. If you have an instant pot use it for these, goes so fast, If you don't a stove top or slow cooker works too (the cook time is just different). These meals are also great for vegan, plant-based weight loss.

Meals from the video:
Meal #1 - Frozen broccoli, frozen rice, chickpeas and my healthy vegan mama cheese sauce ( cheese sauce - https://youtu.be/2JE0BNhZ4z4).
Defrost broccoli for 4 minutes. Add everything else when the broccoli is finished and it all melts together :)

Potato Curry
2 cloves of garlic
1/2 large onion
3-4 large potatoes
1 tsbp curry powder
1 tsp garam masala
1 tsp turmeric
1 can light coconut milk
1 tbsp tomato paste
5 oz fresh or canned tomatoes
1/2 - 1 C peas
large handfuls of spinach
cook in the instant pot on high pressure for 15 minutes. Manual release
on stove top cook until potatoes are soft

Potato and White Bean chili/soup
1 tsp chili powder
1/2 tsp chili flakes
1/2 cilantro
1 -2 cups corn
2 cloves garlic
1 onion diced
1/2 tsp oregano
3-4 Yukon gold potatoes
1/2 tsp thyme
32 ounces veggies broth
1 tsp smoked paprika
1 tsp cumin
1-2 cans of white beans
Put in the instant pot and cook on high pressure for 15 minutes. Manual release on - stovetop cook until potatoes are soft

Mexican Quinoa:
4 c water
1 can fire roasted tomatoes
1 can black beans
2 c quinoa
1 c onions
1 c corn
2 c bell peppers
8 oz salsa or taco sauce - sometimes I used 1 entire jar of salsa
1 tsp garlic powder
2 tsp chili powder (or more)
Cook on high pressure in Instant Pot - manual release
