Not Your Regular Chicken Soup | Loaded with veggies | Fragrant and delicious
Ingredients:
Chicken breast (or any boneless parts) - 2 medium size
Butternut squash - 1/2 medium size
Celery - 2
Bell Pepper - 2 medium size
Onion - 1 small to medium size
Garlic - 4-5 cloves
Olive oil
Paprika - 1 tbsp.
Cumin - 1 tbsp.
Chili flakes - 1/2 tsp.
Sage - 1/2 tbsp.
Bay leaves - 3-4 leaves
Salt - 1.5 tbsp.

Preparation:
Cut chicken into cubes, chop onion and garlic finely, cut carrots, potatoes, celery into small cubes. Squash should be cut into bigger pieces. Otherwise it will be boiled too soft.

Heat up olive oil on a pan on medium, add garlic and onion, stir fry for 2-3 mins. Add carrots and stir fry for 4-5 mins. Decrease flame to low, make an opening in the middle of the pan and add all spices except bay leaves. Note: you always want to put bay leaves into liquid, otherwise they get crushed into small pieces when you stir your dish while cooking. Stir fry for 2-3 mins, add chicken and cook for 30 mins covered. Stir your dish from time to time. Add squash, celery, potatoes, and 4 cups of boiling water. Now put bay leaves. Increase flame to medium and bring everything to boil. Decrease stove temperature as needed to keep your soup simmering for 15 more mins. Enjoy your soup with a home made sourdough bread!
