Country Breakfast Skillet! 🍳🔥

You could never go wrong with a breakfast skillet...especially one like this! Healthy, packed with flavor and so easy to make! Also versatile, so use whatever you like in yours!

FULL RECIPE ⬇️

INGREDIENTS
- Extra virgin olive oil
- ~2 cups diced potatoes of choice
- 1 diced red bell pepper
- 1/2 diced medium sized White Onion
- 4-6 baby bella mushrooms, sliced
- 4 links of Country Style Breakfast Chicken Sausage (I used Al Frescos' Country Style Breakfast Chicken Suasages)
- Seasonings: Salt, Pepper, Garlic Powder, Onion Powder, Smoked Paprika all to taste.
- 3 eggs
- ~1/2 cup shredded colby jack cheese
- Garnishes: Everything but the bagel seasoning & fresh chopped parsley

Note: Measurements are estimated. Adjust ingredients to your liking. I used a 12 inch cast iron skillet in the video.

DIRECTIONS
1. Prepare all ingredients by dicing up the potatoes, veggies and sausages.
2. Add some olive oil to large skillet over medium heat then add in the potatoes. Let them cook for ~8-10 minutes mixing every few minutes.
3. Next add in the veggies. Mix and let cook for another few minutes then add in the sausage. Mix to combine and let everything cook together for another ~6-8 minutes.
4. Once everything is cooked nice and crispy, lower the heat then create slots for the eggs. Crack in the eggs and sprinkle on the cheese. Cover to let the cheese melt and the eggs to cook to your liking.
5. Garnish & ENJOY! 🙌🏻
