1 TBSP COCONUT OIL
1 WHITE OR YELLOW ONION, DICED
2-3 GARLIC CLOVES, MINCED
1 RED BELL PEPPER, DICED
2 CANS DRAINED AND RINSED LENTILS
2 CUPS BROTH
1 TSP GROUND CUMIN
1 TSP SMOKED PAPRIKA
1/2 TSP CHILLI POWDER
1-2 CUPS WELL-WASHED CHOPPED KALE (BABY KALE IS AMAZING)

Serve with vegan sour cream for maximum satisfaction.

●● MINESTRONE
1 TBSP OLIVE OIL
2 CELERY STALKS, DICED
1 LARGE EGGPLANT, DICED
1 WHITE OR YELLOW ONION, DICED
2-3 GARLIC CLOVES, MINCED
500G DICED TOMATOES (box or can is OK)
2-3 CUPS BABY SPINACH OR KALE
4 CUPS OF BROTH
1 CAN KIDNEY BEANS
1 CAN BUTTER BEANS
1 BAY LEAF
1 TSP DRIED OREGANO (OR 2 SPRIGS FRESH)
1 CUP SMALL PASTA (I USED RISETTI)
SALT to taste

1 TBSP OLIVE OIL
1 WHITE OR YELLOW ONION, DICED
2-3 GARLIC CLOVES, MINCED
1 TSP TURMERIC
1 TSP GROUND CUMIN
1 TSP SMOKED PAPRIKA
1 TSP ITALIAN HERBS OR OREGANO
1 CAN LITE COCONUT MILK
1-2 CUPS WELL-WASHED CHOPPED KALE (BABY KALE IS AMAZING)
3 TSP NEUTRAL VINEGAR (LIKE RICE VIGEGAR) OR LEMON JUICE - CAN BE ALSO SERVED AT A TABLE

COOKING TIPS
In many cases, fats are flavor carriers and different fat types are "local" to some geographies. For example, you could technically use olive or neutral oil in a lentil stew but it will take this dish from South Eastern to European direction. Play around with different fats and oils to create an effect that you want.

Instant pot gets HOT on a saute mode. I've discovered that you can turn off the saute mode while cooking - and it really helps to control the temperature.

In a minestrone, the bean mix, of course, offers protein and fiber but the mix itself is really up to you.

Massage your kale, so it becomes softer. Baby kale is amazing - if you haven't tried it, I do highly recommend you give it a go.
